The best 𝑩𝒖𝒕𝒕𝒆𝒓 𝑪𝒉𝒊𝒄𝒌𝒆𝒏 𝑪𝒖𝒓𝒓𝒚 you will ever taste....plus it’s healthy and perfect for all the family! Toddler loves it! ☺️Omit the chicken to make it vegetarian friendly! 🙌🏻
-1 cup basmati rice
-1 cup @nutraorganics chicken stock
-1 can organic chopped tomatoes
-2 teaspoons yellow curry powder
-1 teaspoon garam masala
-1 teaspoon ground turmeric
-Pinch salt and pepper
-500g organic boneless, skinless chicken thighs, cut into 1-inch chunks (higher in iron)
-1 can organic chickpeas
-1/2 sweet onion, diced
-1 head of broccoli
-1 Capsicum any colour, diced
-2 organic carrots chopped
-3 cloves garlic, minced
-1 tablespoon freshly grated ginger
-1/2 cup full fat geek yogurt or coconut milk
-In a large saucepan of 2 cups water, cook rice according to package instructions; set aside.
-In a small bowl, whisk together chicken stock, tomatoes, curry powder, garam masala, turmeric, salt and pepper.
-Place chicken, onion, garlic and ginger into a pan or slow cooker.
-Stir in chicken stock mixture.
-Add can of chickpeas, carrots, capsicum and any other broccoli.
-Cover and cook on low heat for 4 hours.
-Stir in Greek yogurt or coconut milk; season with salt and pepper, to taste.
-Serve immediately with @simsonspantry naan bread and rice (or some homemade chips!) 👌🏻😊
