Anyone else completely over 2020? 😩 I have had a really rough week, so no time to bake and experiment in the kitchen 😔. However, I’ve found it therapeutic to spend time in my yard and garden👩🏻🌾🌱. Whipped up some pesto using homegrown basil in my garden; it took me 5-10 min to make and great to use for quick dinners like salmon or pasta. If you don’t have time (or energy) to cook, this is great to have handy to still eat healthy!
I make a classic version of this using pine nuts or walnuts with garlic, olive oil, and Parmesan, or a vegan version that can either sub Parmesan for nutritional yeast or leave it out! I also like adding in spinach or a little kale if I have it on hand. If you like pesto, experiment and find what works for you - you’ll never want store-bought pesto again 😋 #pesto
